Another thing that helps me is pushing down on the outside foot peg (left hand turn, push down on the right foot peg). It probably does the same (makes your outer knee press against the tank a little more). It helps stabilize the bike.

ParticipantJust relax and have fun. If you don’t get an exercise completely at first, don’t sweat it. I could barely power-walk at the beginning of the first day, but by the end of that day I was able to shift smoothly and accelerate through turns (the fun stuff). Just relax.

ParticipantI passed the MSF course last weekend. If you just relax and pay attention you’ll do fine. Did I mention “RELAX !!!”. That’s the key. Just relax and enjoy the riding. My instructor said you basically get to ride the equivalent of 300 miles during the course, so just have fun.

ParticipantBank and Fotobits are right. Sit down and talk about it. My wife wasn’t too keen on the idea either, but we talked it out. Elwood1960 had a great idea too, have her take the MSF class. She may be transmitting the fear she has onto you and by taking the class she may not be afraid anymore. You might even produce a riding partner.
